Today I will make it Lovely Beet day!

Genius Beet !!!
My obsession with Beets is pretty young, I used to hate the smell and taste of it. But in last one year I have learned to Love it. All the Great things what Beets are giving to your Body, one thousand ways how you can eat, drink or cook it! And how we cant Love this Beautiful Colour what Beets have.

Especially people who want to loose weight in healthy way should start Loving Beets! Beet is really low on calories, only 46 calories per 100g . But not so low on nutrients…  fiber, potassium, calcium, magnesium, phosphorus, iron, manganese, selenium, zinc, carotenoid, organic acids, B-group, C-, P- and PP-Vitamins are all in there. Stop eating suppliments and eat right food where you can get everything what your body needs.
I read from Aive  Luigela  book that we should consume at least 100g of beet per day. Beet is very good for digestion! If you are not interested of cooking beet, but you still want to consume all nutrients from it…. then the best way is to drink freshly pressed beet juice, if you dont have juicer then most of the supermarkets are also selling natural beet juice. Beet juice is perfect to drink after workout to boost Your Energy!
Beet is not very popular worldwide, there are countries where they have few dishes where they use beet, but not so much. So all the lucky ones who have beets growing in their backyard or on grannys field…. then go and grab it! Always when I think of Food, I feel so Blessed to Be Estonian!

So here are some of my favorite ways how to great some Delicious meals with Beet!

Beet Cutlets
[Perfect next to meat dish or alone as light dish, I personally love to eat it next to pork liver]

*500g of boiled Beet

*2 boiled Potatoes

*Fresh Lemon juice

*Frash Basil leaves

*2 pieces of Garlic

*2 tablespoons of Rye Flour

*1 Egg

Chop Beets n smash Potatoes with fork. Mix them and add juice of half Lemon, riped Basil leaves, choped Garlic, Flour, Egg, Salt and Pepper. When you mix them and cutlet dough seems too runny then add more flour. And its ready to hit the pan, fry cutlets from both sides until they are ready. Serve with Sour Cream n Rucola!

My next big favorite is really simple Oven Beets

*Raw Beets

*Garlic

*Oregano

*Balsamic

*Olive oil

Cut raw beets into average slices, not too thin and put them into bowl. Add chopped Garlic, Oregano, Oil, Salt&Pepper and mix it up. Spread beets over oven plate and put them to oven for 35 minutes with 250°.

Also you can find Easy Beet salad recipe from previous blog post. Dont forget that Beet is also great veggie what you can grill.

Few tips for Beet Juice… You dont need to make juice only of beet. Great veggies n fruits what to add are carrots, apples and celery. They give more Enjoyable taste for your juice.

Also what is really important to know about fresh Beet juice is that you have to put it in to fridge for a little bit before drinking. If you are wondering why… the reason is that Beet have substances what arouse Nausea and Diarrhea, so if you keep it in the fridge for some minutes these substances will leave and juice will be ready for cleaning your body and you can consume tons of more good nutrients what you body needs.

  1. My two favorite ways to eat beets are roasting with other roots and vegetables- potatoes, garlic, beets, and cauliflower all cut up together and roasted in a pan with olive oil and a little salt.

    My second way is to make a pizza with very thinly sliced potatoes and beets. No sauce is used. Raw, very thinly sliced potatoes are placed directly on the raw pizza dough, overlapping slightly so that no dough shows through. Raw beets, sliced only a tiny bit thicker are then placed on the potatoes, but spaced so that potatoes can be still be seen. Then a light coating of olive oil and a little salt before baking.
